A wonderful and unique recipe

Ridge gourd is a vegetable that is often made with mild spices, but if you want to taste it spicy and tangy, then the recipe of stuffed ridge gourd can be a great option for you. Material:

– 6-8 medium sized Ridge gourds

– 2 onions (finely chopped)

– 2 tomatoes (finely chopped)

– 2 green chillies (finely chopped)

– 1 tsp ginger-garlic paste

– 1 teaspoon cumin

– 1 tsp coriander powder

– 1/2 teaspoon turmeric powder

– 1 teaspoon red chilli powder

– 1/2 teaspoon garam masala

– 1 teaspoon fennel powder

– 1 teaspoon dried mango powder (for a spicy taste)

– Salt to taste

– 2-3 teaspoons of oil

– Green coriander (for garnishing)

Method:

1. Preparation of Ridge gourd:

First of all, wash the Ridge gourd and cut both its ends. Now cut the Ridge gourd lengthwise from the middle in such a way that it remains attached from one side and you can fill the masala in it. After this, put a little salt inside the Ridge gourd and keep it aside for some time.

2. Preparation of the masala:

Now heat oil in a pan. Add cumin seeds and when they start crackling, add chopped onions. Fry the onions till they turn golden, then add ginger-garlic paste and green chillies. Fry them for a few minutes. Now add tomatoes and cook them till they become soft.

After this add coriander powder, turmeric powder, red chili powder, fennel powder, dry mango powder and salt. Mix all these spices well and cook the masala until the oil separates. Finally add garam masala and turn off the gas. Let the masala cool down.

3. Spice Stuffing in Ridge Gourd:

When the masala cools down, fill the prepared masala inside the luffa properly. After filling the masala evenly in all the luffas, apply a little oil on them and keep them ready.

4. Cooking the Ridge gourd:

Heat 2 teaspoons of oil in a pan. Now slowly place the stuffed ridge gourd in the pan and cover it and cook on low flame. Turn the ridge gourd after every few minutes so that it gets cooked well from all sides and the flavour of the spices reaches inside. Cook it till the ridge gourd becomes soft and golden.

How to serve:

Your spicy and tangy stuffed Ridge gourd is now ready. Serve it hot with roti, paratha, or dal rice. Garnish with green coriander leaves and enjoy its spicy taste.
