We all know that this small fruit is no less than a ‘magic pill’ for our health, hair and glowing skin. But the problem is that their season lasts only for two-three months. By March they disappear or appear dry and yellow.
So the question is, will we have to make do with just making murabba or pickle? No! If you want to eat raw and fresh amla throughout the year, then we have some ‘desi jugaad’ (hacks) that will keep it fresh for months—without any chemicals.
1. Freezer Method (Easiest and Best)
If you lead a hectic life, then this method is for you. Just like we freeze green peas, Amla can also be frozen.
- How to do: Bring fresh gooseberries from the market, wash them thoroughly and wipe them with a cloth. Now let them have a Zip-lock Bag Fill in, remove all the air from the bag and put it in the freezer.
- Benefit: Whenever you want to make juice or chutney, take it out from the freezer and use it. There will not be even an iota of difference in taste. You can also cut them and remove the seeds and freeze them so that it becomes easier later.
2. The magic of salt water (old and effective)
You must have often seen the elders in your house trying this method. It is also called ‘water gooseberry’.
- How to do: Take a glass jar (better not plastic). Fill it with water and add one tablespoon salt and a little turmeric. Now dip the washed gooseberries in this water. Close the lid tightly and keep it in the refrigerator.
- Benefit: Due to salt and turmeric, Amla does not rot and remains green and hard for a long time. It is also very good for the stomach. Whenever you feel like taking out an Amla (Indian Gooseberry) and eat it.
3. Cut and Dry (Desi Candy)
If there is good sunlight in your house, then cut the gooseberries, apply salt and dry them in the sun. After drying they become hard. You can keep these in your pocket like mouth freshener (Mukhwas). This dry Amla provides instant relief in case of vomiting or nervousness while traveling.
4. Wrapped in newspaper (for a week)
If you do not want to freeze, then wrap the gooseberries in newspaper or tissue paper and keep them in a plastic container in the refrigerator. Due to this they will not turn black and will remain fresh for 2-3 weeks.
