How to remove bitterness of bitter gourd?
To make bitter gourd curry, you have to remove its bitterness beforehand. For this, wash and peel the bitter gourd. Now apply salt well to the bitter gourd and keep it for 10 minutes. Now wash the bitter gourd with water. This will reduce the bitterness of bitter gourd considerably. Even today, grandmothers prepare bitter gourd curry in the same manner.
How to make bitter gourd curry without bitterness
Step 1- First of all, cut the peeled bitter gourd into long or round shapes. Bitter gourd will be cut in round shape and there will be no need to remove seeds from it. Raw seeds also taste good in bitter gourd curry. Now cut 2 medium sized onions into long and thick pieces to add to the vegetable. Also chop about 3-4 cloves of garlic. Chop 1 green chilli to add to the vegetable.
Second step- Pour mustard oil in the pan and first add green fennel in it. As soon as you add fennel, add garlic and green chillies. Add some turmeric to the oil itself. Now add chopped bitter gourd and chopped onion, mix and cook the vegetable for some time on high flame while stirring continuously. Now add coriander powder, salt and if desired, some red chilli powder.
Third step- Cook the bitter gourd curry on medium flame by turning it continuously. Cover it for a while so that the vegetable gets cooked quickly. When the bitter gourd is almost cooked, add about 1 teaspoon sugar to it and also add half a teaspoon mango powder. Fry the vegetables until slightly crispy.
