Idli: Idli is one of the most popular dishes of South India. As tasty as it is, it is equally healthy. Everyone likes soft idlis. To make idli soft and spongy, most people use eno or baking soda. But do you know that you can make soft idli at home without using Eno and baking soda. Here we have brought for you a recipe of idli which can be made soft without eno and baking soda. 3 cups idli rice
1 cup unpeeled urad dal
1/2 tsp fenugreek seeds (it helps a lot in fermentation)
2. Correct method of soaking and grinding
Miracle of Fenugreek: Soak fenugreek seeds along with lentils. Fenugreek creates natural air in the batter which makes the idli puffy.
Grind separately: Grind pulses and rice separately. Grind the dal until it becomes smooth and fluffy, just like butter.
Cold water: If the mixer is getting hot while grinding, use cold water with some ice. This does not spoil the yeast in the batter.
3. Whipping the Batter
After grinding, add the dal and rice paste and beat with your clean hands for 4-5 minutes. Beating introduces oxygen into the batter, which is very important for natural fermentation.
4. Fermentation
Keep the batter in a warm place for at least 8 to 12 hours. If you live in a very hot place, add salt later. If the weather is cold, salt can be added first as salt slows down the yeast process a bit. Always keep the batter in a big vessel as it doubles in size after rising.
5. Prepare Steam
When the batter swells well and a mesh starts appearing in it, do not stir it too vigorously. Oil the idli stand and pour the batter. Only after the water starts boiling, place the stand inside and steam it on medium flame for 10-12 minutes. Soft idli without eno and baking soda is ready.
