Ingredients for Dahi Brinjal:
250 grams brinjal, 5 tablespoons mustard oil, half teaspoon mustard, 1 teaspoon cumin, 1 bay leaf, 2 onions, crushed ginger, 1 green chili, 1 tablespoon gram flour, a pinch of turmeric, 1 teaspoon red chili powder, 1 teaspoon coriander powder, half cup water, 1 cup curd, salt as per taste, 2 tablespoons green coriander.
How to make curd brinjal vegetable
Step 1: To make Dahi Brinjal vegetable, first wash the brinjal thoroughly in water and then cut each brinjal into four pieces. Now apply salt on all the brinjal pieces.
Second step: Now turn on the gas and add oil in a pan and fry the brinjal until it turns golden. Remove them after frying.
Third Step: Now add cumin, mustard and bay leaves in the same pan oil, when it starts crackling then add crushed ginger and green chilli and fry.
Fourth Step: When these ingredients turn brown, add finely chopped onion and fry until golden. Now after that add 1 tablespoon gram flour and fry on low flame for 5 minutes.
Fifth Step: Now take curd in a bowl, beat it and add turmeric, chilli powder, coriander powder and garam masala and mix well again.
Step 6: Now, add this mixture to the vegetable and keep stirring until the curd is mixed well. When the curd mixes well, add fried brinjal and salt to it.
Seventh Step: Now mix all the ingredients well and let it cook for some time on low flame and then turn off the gas.
Step 8: Finally, garnish with green coriander and the vegetable is ready.
