Potato Gutkas: You must have tasted many types of vegetables from potato parathas, but have you eaten potato gutkas? This is also a snack or side dish of potatoes which is made extensively in Uttarakhand. It is made with boiled potatoes, whole spices and mustard oil which you can eat with roti and rice. So let’s know how to make this recipe?
Ingredients for Potato Gutka
Green coriander, piece of ginger, two green chillies, whole coriander one spoon, cumin one spoon, mustard oil, 4 boiled potatoes, asafoetida half spoon, dry red chilli 2, turmeric powder half spoon, Kashmiri red chilli powder half spoon, cumin powder half spoon, salt as per taste.
How to make potato gutka?
First of all, to make the paste, chop green chillies, ginger and coriander. Now put them in a mortar along with whole coriander and cumin seeds and make a coarse, textured paste and keep aside. After that, cut the boiled potatoes in half and then cut them into small pieces. Keep in mind that the potato you are using should not be sweet.
Now, take an iron pan and add mustard oil in it. When it becomes hot, add chopped potatoes and fry on medium-high heat, while stirring, until they become light golden from outside. Once they turn golden, take them out in a bowl and keep aside.
In the same pan, add mustard oil and then add asafoetida and dry red chilli and let it crackle. Add the prepared coarse paste and mix. Add some hot water along with turmeric, Kashmiri red chilli powder and cumin powder. Mix them well and cook the masala until the raw smell disappears and the oil starts separating again.
Now, add the fried potatoes and cook on medium-high flame until the potatoes are coated with the spices. Your delicious potato gutkas are ready.
