Baghrir (Semolina Pancakes)
Ingredients
- 1 cup fine semolina
- ½ cup all‑purpose flour
- 2 tsp baking powder
- ½ tsp dry yeast
- 2½ cups warm water
- ½ tsp salt
- 1 tbsp sugar
For the sauce:
- ½ cup butter
- ½ cup honey
Method
- Prepare batter
- In a blender, combine semolina, flour, baking powder, yeast, salt, sugar, and warm water.
- Blend until smooth and slightly thin.
- Let batter rest for 30 minutes to activate yeast.
- Cook pancakes
- Heat a non‑stick skillet over medium heat.
- Pour a ladleful of batter; spread lightly.
- Cook only on one side until surface is covered with tiny holes and pancake is set.
- Do not flip — Baghrir are cooked from one side only.
- Make sauce
- Melt butter in a small pan.
- Stir in honey until smooth and warm.
- Serve
- Arrange pancakes on a plate.
- Drizzle generously with warm butter‑honey sauce.
Tips
- Batter should be pourable but not too thin; adjust with water if needed.
- Resting time is important for the “thousand holes” texture.
