Ingredients required to make Bathua Kachori
250 grams bathua
2 cups wheat flour
2 tbsp semolina
2 tbsp oil or ghee (for moyan)
1 tbsp ginger-green chilli paste
1/4 teaspoon asafoetida
1/2 teaspoon celery
chilli powder
coriander powder
salt as per taste
Prepare Bathua paste like this
First of all, clean and wash the Bathua leaves thoroughly. Now pour some water in a pan and boil Bathua leaves for about 5 minutes. Filter the water and let the bathu cool down. When it cools down, add ginger and green chillies and prepare a fine paste.
correct method of kneading dough
In a large bowl, add wheat flour, semolina, salt, celery, asafoetida and all the dry spices. Now add 2 spoons of oil or ghee and mix well with hands. Add prepared Bathua paste and knead a stiff dough by adding little water as per requirement. Cover the dough and let it rest for 15 minutes.
How to make Crispy Kachori
Make small balls of the rested dough. Apply a little oil on the palm, grease the balls and roll them a little smaller and slightly thicker than the puri. Now heat oil in the pan on medium flame. When the oil is hot, add the kachoris one by one and fry them by pressing gently with a ladle until they become golden and crisp from both the sides.
