Beef Plov with Chickpeas
- 500g beef (cut into cubes)
- 2 cups basmati rice
- 1 cup boiled chickpeas
- 2 large carrots (cut lengthwise)
- 2 onions (sliced)
- 1 whole garlic clove
- 4 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon black pepper
- 1 teaspoon paprika
- Salt to taste
- 4 cups hot water
Method of preparation
- Wash the rice and soak it for 30 minutes.
- Heat oil in a heavy bottomed pan and fry the onions till golden brown.
- Now add the beef and brown it well over high heat.
- Add the carrots and cook for 5 minutes to bring out the sweetness.
- Add cumin, black pepper, paprika and salt.
- Add the chickpeas and pour hot water over them.
- Place a whole garlic clove in the center and cook on low heat for 20–25 minutes.
- Now spread the soaked rice over the top. Do not stir too much.
- Cover and cook on low heat until the rice becomes soft and fluffy.
- Mix gently before serving.
