Billie Eilish’s Dubai Chocolate Recipe Is “Delicious”

One of the top food trends this year probably graced your social media feeds once or twice—or let’s be honest, dozens of times. It’s Dubai chocolate: a viral chocolate bar with a pistachio-tahini filling complemented with shredded phyllo (kataifi) to make a delicious, crunchy bite. You can opt for a store-bought version, but for Billie Eilish, the homemade version is best.

The pop star took to TikTok in August and shared her recipe for the ultimate Dubai chocolate bar, but there’s a slight twist. Because the “Wildflower” singer is vegan, the dessert is made entirely plant-based, from the chocolate to the creamy filling.

“[It’s] impossible [to] find vegan ones anywhere,” she writes about the viral chocolate in the caption of her video, which has exceeded 100 million views, 10 million likes and 165,000 comments. “This is just as good as the real [one,] if not better.”

Using plant-based butter to toast up the kataifi, Eilish melts down dairy-free chocolate in the microwave before pouring it in a chocolate bar mold. She only coats the molds instead of filling them completely (that way, she can add the filling in later) and puts them in the freezer so the chocolate hardens. Meanwhile, she mixes together the toasted kataifi and pistachio cream until combined. She adds this mixture on top of the solidified chocolate to fill the molds. To seal it together, Eilish covers the filling with melted chocolate before putting it in the freezer for the bars to set.

While not perfect, as she didn’t coat the sides of the mold to fully form the bar, Eilish notes that it’s “still delicious.”

“It’s not about how it looks, it’s about how it tastes,” Eilish says, and we fully agree with that sentiment. We especially love that the Grammy-winner-turned-chef pairs the dessert with strawberries, dipping strawberries in the pistachio-kataifi filling and pairing them with the completed bar, offering a fresh balance to the creamy, nutty flavor of the chocolate.

For strawberries, we’re thinking Eilish would love our plant-based Brownie Batter Dip to pair with the anti-inflammatory, heart-healthy fruit. But first, we’ll be trying her simple Dubai chocolate recipe immediately to round out the year.
