Sometimes you feel like making something that is light to eat, but absolutely number one in taste. And if we talk about South Indian food, then only Idli and Dosa come to our mind. But today I am going to tell you about a dish of South India (especially Karnataka), which is different from Dosa and Idli, but is similar to them in taste. Its name is ‘Akki Roti’. You already know that ‘Akki’ means rice and ‘Roti’ in Kannada language. That is, spicy roti made of rice flour. The best thing is that it is gluten-free. (Ingredients) You don’t need anything fancy to make Akki Roti, everything is present in your kitchen: Rice flour: 2 bowls Onion: 1 finely chopped Green chillies: 2-3 (as spicy as you like) Curry leaves: 8-10 (chopped and added) Coriander: a lot Carrot or bottle gourd (grated): if you want to make it more healthy (optional) Cumin: 1 small Teaspoon Salt: As per taste Oil or Ghee: For roasting Easy way to make (Step-by-Step) Kneading the dough: First of all take rice flour in a big vessel. Now add chopped onion, green chilli, coriander, curry leaves, cumin, salt and if you have grated carrot, then add it. Mix all this well in dry flour. Now slowly add lukewarm water and knead a soft dough (like that of corn roti, neither too hard nor too wet). How to roll the roti?: Here is a trick. Rice rotis are not rolled with a rolling pin. Take a banana leaf or plastic sheet (a clean milk bag will also work). Apply some oil on it. Take a ball of dough and spread it round and thin with the help of fingers. You can also make it on a pan: If you do not have a plastic sheet, you can spread it with your hands directly on a cold pan and then turn on the gas (this is the most desi jugaad!). Method of baking: Now heat the pan and pour some oil on it. Carefully turn the roti from the sheet onto the pan (or let the roti cooked directly on the pan). Leave a little oil on the sides and cover and cook on medium flame. When it becomes golden brown and crispy from the bottom, turn it over and cook the other side as well. How to serve? Serve hot crispy akki roti with coconut chutney, tomato chutney or just butter. Believe me, you will find pizza and burgers pale in comparison to its crispness and onion-chilli taste.
