Butter Chicken Hand Pies Recipe

A rich, creamy butter chicken filling wrapped in crisp, flaky puff pastry—perfect as a snack, party bite, or portable meal.


Ingredients

For the butter chicken filling:

  • 2 cups cooked chicken (shredded or diced; grilled or roasted works best)

  • 2 tablespoons butter

  • 1 medium onion, finely chopped

  • 2 teaspoons ginger-garlic paste

  • 1 cup tomato puree

  • 1/2 cup fresh cream

  • 1/2 cup yogurt

  • 1 teaspoon red chili powder

  • 1 teaspoon garam masala

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • Salt to taste

  • 1 teaspoon sugar (optional, for balance)

  • Fresh coriander leaves, chopped

For the pastry:

  • 1 sheet puff pastry (thawed)

  • 1 egg (for egg wash)

  • 1 tablespoon milk


Instructions

  1. Prepare the filling
    Heat butter in a pan over medium heat. Add chopped onions and sauté until soft and golden. Stir in ginger-garlic paste and cook for about a minute until fragrant.

  2. Make the sauce
    Add tomato puree and cook for 5–7 minutes until it thickens and the oil starts to separate. Mix in turmeric, chili powder, cumin, coriander powder, garam masala, salt, and sugar. Cook for another 2–3 minutes.

  3. Add chicken and cream
    Stir in the yogurt and cooked chicken. Mix well so the chicken is fully coated. Add cream and simmer for 5 minutes until the mixture becomes rich and thick. Garnish with fresh coriander and let the filling cool completely.

  4. Prepare the pastry
    Preheat oven to 200°C (390°F). Roll out the puff pastry and cut it into equal squares or circles.

  5. Fill and seal
    Place a spoonful of butter chicken filling in the center of each piece. Fold over to form a triangle or rectangle and seal the edges with a fork.

  6. Egg wash
    Whisk egg with milk and brush it over the top of each pie for a golden finish.

  7. Bake
    Place the pies on a lined baking tray and bake for 15–20 minutes or until golden brown and crisp.

  • Ensure the filling is thick and not watery to prevent soggy pastry.

  • You can add a little grated cheese for extra richness.

  • Serve with mint chutney or yogurt dip for best flavor.
