During the winter season, everyone likes to eat vegetables made from cabbage, carrots, peas, halwa and paratha. Be it cabbage and pea curry or the tasty carrot halwa, people eat it with great enthusiasm. Carrot season is also about to end. In such a situation, if you want to eat carrot halwa throughout the year or for months, then know the simple way to store it.

Freezing and Storing Carrots

This method is best to preserve carrots for a long time. For this, choose fresh, red and hard carrots. Wash thoroughly and peel. Grate or cut into small pieces as per your need. Now blanch by putting it in boiling water for 2-3 minutes. Immediately put in cold water (ice water). Dry the water completely and fill it in an airtight zip bag or container. Keep it in the freezer. In this way carrots can last comfortably for 8–10 months. When you want to make halwa, use it straight from the freezer.

Freeze Grated Carrots in Portions

If you often make carrot halwa, then pack the grated carrots in 1-1 cup portions. Make small packets and keep them in the freezer. Take out one packet and use as per requirement. With this, there will be no need to remove the entire stock again and again.

You can also make pudding and store it.

If you have time, you can make halwa in advance and store it. Let the pudding cool completely. Fill it in an airtight container and keep it in the freezer. The taste will remain intact for 1–2 months. Before eating, heat it lightly in microwave or gas.

Storing Carrots for Pickling

If you want to make carrot pickle. Wash and dry the carrots. Cut it into pieces and dry it lightly in the sun for 1-2 days. After this keep it in an airtight container or make pickle directly.

  2. Remove air from freezer bags and pack.
  3. Do not store spoiled or soft carrots.
