There is often a complaint that poha at home either sticks or remains dry. But if you want to make it in the street style of Mumbai, then some small but important things have to be kept in mind. Ingredients: What is needed? (Ingredients List)
Burst: 2 cups (thick poha is best)
Onion (Kanda): 2 medium (finely chopped)
Potato (Potato): 1 large (cut into fine cubes)
Groundnut: 2 tbsp (raw or roasted)
Curry leaf: 8-10 leaves (it doesn’t matter if they are fresh!)
Green chilly: 2-3 (keep less spicy for kids)
Mustard and cumin: half-and-half teaspoon
Turmeric Powder: half teaspoon
Sugar and Salt: As per taste (sugar gives the real balance)
Lemon Juice and Coriander: to decorate
Tadka: Oil (as required)
Method of preparation: Step-by-Step
Correct way to soak poha: First of all, place the poha in a strainer and wash it gently by adding water. Keep in mind, do not leave the poha soaked in water, just make it wet. Now add salt, turmeric and a little sugar to it and leave it for 5-10 minutes. This will make Poha delicious.
Potato and Peanut Crunch: Heat oil in a pan. First of all, fry the peanuts until they turn golden and take them out. In the same oil, add finely chopped potatoes and cook them until they become crisp.
Tadka and masala: Now add mustard seeds, cumin seeds, asafoetida and curry leaves in the remaining oil. When the mustard seeds start crackling, add finely chopped onion and green chilli and fry until it turns light pink. Do not turn the onion too red, keep it slightly ‘crunchy’.
Magic of Mixing: Now add prepared poha, fried peanuts and potatoes in the pan. Mix everything well. Cover and let it steam for 2 minutes on low flame. This is the step by which poha becomes soft.
Finishing Touch: Turn off the gas, squeeze fresh lemon over it and add lots of finely chopped coriander. If children like, they can also add ‘nylon sev’ or ‘pomegranate seeds’ on top.
‘Pro-tips’ to make perfect poha
Water Balance: While washing poha, do not rub it too much, otherwise it will start breaking.
Steam is necessary: After mixing the poha, do not forget to cover it and steam it for 2 minutes, this keeps the grains soft.
Batata Cutting: Cut the potatoes into very small pieces so that they cook quickly and come in every bite with the poha.
