This is a dish which may seem a little difficult to make, but with the recipe we are going to tell you today, you can easily make hotel-like Blueberry Cheesecake at home, which will win everyone’s heart. Ingredients required: For the base (crust): Biscuits (digestif or any Mari biscuits): 1 cup (finely crushed)Butter (melted): 4 spoons For the filling (cheesecake mixture): Cream cheese (softened): 250 grams (about 1 cup)Sugar: 1/2 cup Heavy Cream or Whipping Cream: 1/2 cupVanilla Extract: 1/2 teaspoonEggs: 2 (large)Lemon Juice: 1 teaspoon (not required, but will add flavor)Blueberries for the topping:Fresh or frozen blueberries: 1.5 cupsSugar: 2-3 teaspoons (to taste)Water: 2 teaspoonsCornflour: 1/2 teaspoonPreparing Method: Step 1: Prepare the base (crust) First, heat the oven at 180°C. Now take a round baking pan (about 8 inches) and put butter paper on its bottom. Mix biscuit crumbs and melted butter well in a bowl. Spread this mixture by pressing it well in the bottom of the baking pan. Bake it in the oven for 10 minutes, then take it out and let it cool. Step 2: Make the Cheesecake Mixture Combine the softened cream cheese and sugar in a large bowl and beat until smooth and creamy. Then add heavy cream and vanilla extract to it. Now add eggs one by one and after adding each egg, beat the mixture lightly (do not beat too much). If you want, you can also add lemon juice at this time, it will further enhance the taste. Step 3: Baking and cooling Pour the cheesecake mixture into the pan over the prepared biscuit base and spread it well. Now increase the oven temperature to 150°C.
