Material:

  • 1 cup buckwheat flour
  • 1/4 cup samak rice (roasted and ground)
  • 1/2 cup boiled potatoes (mashed)
  • 1/2 tsp rock salt (for fasting)
  • 1/2 tsp cumin powder
  • 1/2 teaspoon green chillies (finely chopped)
  • 1 tablespoon coriander leaves (finely chopped)
  • Water (to make the batter)
  • Ghee or oil (to fry the dosa)

For the stuffing (optional):

  • 1 cup potatoes (boiled and mashed)
  • 1/2 teaspoon cumin seeds
  • 1 green chilli (finely chopped)
  • 1 tablespoon ghee
  • Salt to taste
  • Coriander leaves (finely chopped)

Method:

1. Making the Dosa Batter:

  • In a large bowl, combine the buckwheat flour and samak rice powder.
  • Add mashed potatoes, green chillies, coriander leaves, cumin powder and rock salt to it.
  • Make a thin batter by adding water slowly. The batter should neither be too thin nor too thick.
  • Keep it covered for 10-15 minutes.

2. Preparing the stuffing (optional):

  • Heat ghee in a pan and add cumin seeds to it.
  • When the cumin seeds start crackling, add green chillies and mashed potatoes.
  • Add salt and coriander leaves, mix well and cook for few minutes.
  • The stuffing is ready, keep it aside.

3. Making the Dosa:

  • Heat a non-stick pan and lightly grease it with ghee or oil.
  • Pour some buckwheat batter on the pan and spread it in a round shape.
  • Bake the dosa on medium flame and pour some ghee or oil on top.
  • Cook the dosa until it's crispy and golden on one side, then flip it and cook the other side until it's lightly golden.
  • If you want to add stuffing, then place the prepared potato stuffing in the centre of the dosa and fold the dosa.

4. Serving:

  • Buckwheat dosa is ready. Serve it hot with curd or green chutney.

Suggestion:

  • Do not make the dosa batter too thin or too thick. The right consistency of the batter is important so that the dosa can spread easily on the pan.
  • If you want, you can also add other vegetables to the stuffing, like boiled peas or capsicum.
