Ingredients to make Bhindi Do Paja

  • Ladyfinger – 1/2 kg
  • Onion – 2
  • Ginger-garlic paste- 1 tsp
  • Curd – 2 tbsp
  • Green chilli – 1
  • Green Coriander – 2 tbsp
  • Turmeric – 1/4 tsp
  • Mango powder – 1 tsp
  • Red chilli powder – 1/2 tsp
  • Garam masala – 1/4 tsp
  • Cinnamon – 1 inch piece
  • Cardamom – 2
  • Oil – 3-4 tbsp
  • Salt – as per taste

Bhindi Do Paja Recipe

  • To make Bhindi Do Paja, first wash the Bhindi and wipe it with a dry cotton cloth.
  • After this, cut the ladyfinger into two pieces. Similarly, cut all the ladyfingers.
  • Now put oil in a pan and heat it on medium flame.
  • After the oil is hot, add chopped lady's finger to it and fry it. Fry the ladyfinger until its color starts changing.
  • After this, turn off the gas and take out the ladyfinger in a bowl and keep it aside.
  • Now again add 2 tbsp oil in the pan and heat it.
  • When the oil is hot, add cumin, cardamom and cinnamon and fry. When the spices start smelling, add 2 chopped onions.
  • Cook the onion until it appears transparent. It may take 2-3 minutes for this to happen.
  • After this, add turmeric, red chilli powder, dry mango powder and salt as per taste in a pan, mix and let it cook.
  • When the spices start smelling, mix both the curds and cook. When the curd starts releasing oil, add the fried ladyfinger to the pan and mix.
  • Now cover the pan and let the ladyfinger cook for 5-7 minutes. Keep stirring the ladyfinger in between.
  • Finally add garam masala to the ladyfinger and turn off the gas. Bhindi is prepared by making curry with two onions.
  • Serve it hot with roti or paratha.
