Yellow Arhar Lentil

Turmeric

Salt

Ghee

Asafoetida

Cumin

steep red chilli

Onion

Ginger

Lemon

Method
Soak the lentils about 1 hour before. Now while boiling the pulses, keep in mind that after boiling no water is visible in it. Restaurant dal is always thick. You have to follow this secret formula. Add turmeric and salt to the dal and boil it. If you want to add tomato then add it while boiling or if you don't want to add it then skip it. When the lentils boil, heat ghee in the pan. When the ghee becomes hot, add asafoetida and cumin seeds to it. Break red chillies and add them. Keep in mind that the cumin seeds have to be roasted until they turn dark brown. Now add finely chopped onion and grated ginger. Let the onion fry till it turns brown then add Kasuri Methi to it. Now add pulses to this tempering. Cover and turn off the gas. After turning off the gas, add coriander and lemon.

Dhaba Style
If you want to make dhaba style dal then do not add tomatoes while boiling and add them in the tempering. For this, heat ghee and fry asafoetida, cumin, onion and ginger. Later add finely chopped tomatoes and kasoori methi. Fry all these well on high flame and add dal. After turning off the gas, add coriander and lemon.
