Ingredients for Cheese Rice Cutlets

  • 1 cup boiled rice
  • 1/2 cup boiled, mashed corn
  • 2 tbsp semolina
  • 1/4 teaspoon turmeric
  • salt as per requirement
  • 2 tablespoons of virgin olive oil
  • 1 large onion
  • 1 tsp garlic paste
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • Paneer cubes as required

How to make Cheese Rice Cutlet?

  • To make children's favorite rice paneer cutlets, first heat oil in a pan. Now add onion, garlic paste and cook until onion becomes transparent.
  • Now add boiled and mashed sweet corn in the pan. Add red chilli powder, turmeric, coriander powder and salt as per taste, mix well and cook for 2-4 minutes.
  • Now take out the remaining boiled rice in a big vessel and mash it well (you can also add some water).
  • Add vegetable mixture and 2 tablespoons roasted semolina to the bowl. Mix well until a dough like consistency is formed.
  • Now cut this mixture into small pieces and make tikkis. Flatten it, fill a small piece of cheese in the middle and seal it well.
  • Now heat 1 tablespoon oil in a wok or pan and fry the rice tikkis until they turn golden brown on both sides.
  • Once the tikkis are cooked well on both sides, the tikkis are ready to serve. Serve it with tomato ketchup and mint chutney.
