On this day, Lord Krishna wore Govardhan Mountain on his little finger to break the pride of Lord Indra. From that very day onwards, Govardhan Puja is celebrated to conserve nature and celebrate its importance. Every festival has its own special dish which is traditionally prepared on the same day. There is also a special dish associated with Govardhan Puja, whose name is Annakoot vegetable. On this day, this vegetable is specially prepared and offered to Lord Krishna. Ingredients for making Annakoot vegetable
Annakoot vegetable is prepared especially on the day of Govardhan Puja. More than 56 vegetables can be added to make it. This is a kind of mixed vegetable vegetable. You can use whatever vegetables you have available. Just keep in mind that make it in a sattvik way i.e. do not include garlic and onion. Here we are telling you some vegetables which you can use. Like – Potato, Carrot, Beans, Spinach, Fenugreek, Cauliflower, Cabbage, Pumpkin, Raw Banana, Raw Papaya, Peas, Turnip, Tomato, Amla, Pumpkin, Brinjal, Custard Apple, Radish leaves, Water chestnut, Suran i.e. Jimikand, Green chilli. , ridge gourd etc. Apart from this you will need some basic spices. Like – two tablespoons of mustard oil, one inch piece of ginger, a pinch of asafoetida, one spoon of cumin, turmeric powder, coriander powder, chilli powder, garam masala, dry mango powder, salt as per taste and green chilli.
Method of preparation
To make Annakoot vegetable, first of all wash all the vegetables you have thoroughly, peel them and cut them into small pieces. Now keep oil in a pan to heat. Add cumin, asafoetida, ginger and finely chopped green chillies to it. When they crackle well, add basic spices like turmeric, coriander and chilli and fry. However, do not add salt at this stage. Now after frying for two to three minutes, add some water to it and cover it and leave it to cook for a while. Now comes the turn of adding chopped vegetables to it. First add potatoes in it and only then add the rest of the vegetables. Now add salt as per taste and mix. Stir the vegetable well and cover and leave it to cook for about 15 to 20 minutes. Don't forget to stir the vegetables in between. As soon as the vegetable is ready, garnish with chaat masala and finely chopped green coriander. So, your Annakoot vegetable is ready. Offer it to Lord Krishna and then serve it to everyone.
