Ingredients to make Madras Chicken Curry
– 500 grams chicken pieces

-3 teaspoon oil

– 2 large onions

– 8-10 garlic cloves

– 2 tomatoes

– 6 roasted red chillies

-Salt as per taste

– 1 inch piece of ginger

– ½ tsp turmeric

-1 tsp cumin

– ½ tsp red chilli powder

– ½ tsp coriander powder

– 6 tsp whole coriander

– ½ tsp fennel

– 1 tsp black pepper

– 4 cloves

– 1 cinnamon

– 4 cardamoms

– 1 star anise

– 2 bay leaves

– 8-10 curry leaves

How to make Madras Chicken Curry
To make Madras Chicken Curry, first wash the chicken thoroughly, add one teaspoon salt and half teaspoon turmeric and keep the chicken to marinate for half an hour. Now put some oil in a pan, add cumin, coriander, fennel and black pepper and fry well for two to three minutes. After this, fry chopped onion in it till it turns golden brown. Now add ginger, garlic, cloves, cinnamon, star anise and cardamom and fry well on low flame. After this, add chopped tomatoes to the pan and fry until soft. Now turn off the gas and leave everything to cool down.

After this grind the spices in a mixer. Now add bay leaves and curry leaves in a pan and fry for a minute. Now add the marinated chicken and cook it while stirring on high flame for about 5 minutes. Now add the ground spices to it, cover it and let it cook for 10 more minutes on medium flame, so that the spices get absorbed properly inside the chicken.
