Ingredients to make Chicken Kori Roti
For Chicken Curry:
- Chicken – 500 grams (with or without bones)
- Onion – 2 (finely chopped)
- Tomato – 2 (finely chopped)
- Ginger-garlic paste – 1 tbsp
- Green chillies – 2-3 (finely chopped)
- Coconut milk – 1 cup
- Oil – 3 tbsp
- Water – as per requirement
- Salt – as per taste
For spices:
- Coriander powder – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Red chilli powder – 1 teaspoon
- Garam Masala – 1/2 tsp
- Curry leaves – 10-12
- Mustard seeds – 1 teaspoon
For Kori Roti:
- Rice flour – 2 cups
- Water – 3 cups
- Salt – as per taste
Chicken Kori Roti Recipe
1. Prepare chicken curry
- Heat oil in a pan and add mustard seeds in it.
- When the grains start crackling, add curry leaves and fry for a few seconds.
- Now add finely chopped onion and fry until it turns golden brown.
- After this add ginger-garlic paste and green chilli and cook for 1-2 minutes.
- Add chopped tomatoes and cook until tomatoes become soft.
- Add turmeric, coriander, red chili powder, and garam masala and fry the spices well.
- Add the chicken pieces, mix it with the spices and fry for 5-7 minutes.
- Now add coconut milk and some water, cover and cook on medium flame for 20-25 minutes.
- Add salt as per taste and cook till the curry thickens.
2. Prepare Kori Roti
- Heat water and salt in a vessel.
- When the water starts boiling, add rice flour to it and mix well.
- Lower the flame and cook until it thickens.
- Roll the prepared mixture into a thin layer and bake it on low flame to make a crispy roti.
3. Method of serving
Chicken Kori Roti is ready. Serve it hot with curry. Place the kori roti in a plate and pour chicken curry over it.
