To make mushroom masala you need-
– 1 cup chopped onion
– 1 inch ginger
– Chopped Garlic – Half Cup Chopped Tomatoes
– 150 grams mushroom
-3 tbsp curd
– 2 tbsp oil – ½ tsp cumin
– 1 medium to large bay leaf
– half inch cinnamon
-one large cardamom
– 2 green cardamoms
– 2 cloves
– Half teaspoon turmeric powder
– Half teaspoon red chili powder
– Half teaspoon coriander powder – Salt
-Half spoon garam masala
– Half spoon Kasoori Methi
– A handful of chopped coriander
How to make mushroom masala
To make mushroom masala, clean the mushrooms. Then cut its stalk. Now grind chopped onion, ginger and garlic in a blender and make a smooth paste. Then take it out and then add chopped tomatoes in the same jar and make a soft puree and keep this puree aside. Now beat the curd until smooth and keep it aside.
Then heat oil in a pan and add whole spices in it. Then reduce the flame and add ground onion-ginger-garlic paste. Cook the onion paste until it thickens. It takes some time to fry the onion paste. Then add a pinch of salt in it and now add tomato puree. Now cover it and cook for 1 minute and then add turmeric powder, red chili powder and coriander powder to it. Mix it well and fry until oil starts appearing. Then add mushrooms and whipped curd to it. Mix it well and let it roast. Add water in it as per requirement. After the vegetable is cooked, taste it and add salt if necessary. Then cook this vegetable well. After at least 15 minutes, add Kasuri methi, garam masala powder and chopped coriander leaves. Mix again. Vegetables are ready. Serve it.
