Material:

  • Bathua Saag – 1 cup (fresh, washed and chopped)
  • Curd – 1 cup (whipped)
  • Green Coriander – 1-2 teaspoons (chopped)
  • Green chilli – 1 (finely chopped)
  • Roasted cumin powder – 1/2 teaspoon
  • salt to taste
  • Black pepper powder – 1/4 teaspoon
  • Chopped onion – 1 (optional)
  • Red chilli powder – 1/4 tsp (optional)
  • Oil – 1 teaspoon (for frying)

  1. cooking bathua:

    • First of all, wash and chop Bathua greens thoroughly.
    • Heat some oil in a pan and add Bathua greens and fry for a while, so that the Bathua greens become soft and its raw taste goes away. Cook it for 5-6 minutes, until it becomes lightly cooked.
    • Then let it cool.
  2. preparing raita:

    • Put the cooled Bathua Saag in a bowl and add curd to it and mix well.
    • Now add green coriander, green chilli, roasted cumin powder, salt, black pepper and red chilli powder and mix well.
    • If you want, you can also add chopped onion, it enhances the taste of raita.
  3. serve:

    • Bathua raita is now ready. It can be served as a side dish with paratha, roti, or khichdi.

Tips:

  • You can also add other spices as per your choice in this raita, like chaat masala or green chilli paste.
  • Bathua raita is very beneficial especially in winter, as it provides warmth to the body and helps in digestion.
