To make Malai Kofta at home, first of all you will need boiled potatoes. Take boiled potatoes as per your requirement and keep them in the fridge for 5-6 hours. When the potatoes cool down completely, mash the potatoes and cheese well. Now add flour and mix all three well. The mixture should be slightly soft. This will make it easier to make koftas.
2. Now take cashews, raisins and other dry fruits. Cut them into small pieces. Then add 1/2 teaspoon sugar in it. After this, heat oil in a pan. When the oil is hot, make round balls of the potato and cheese mixture and fill dry fruits inside it. Now fry these kofta balls in hot oil. Similarly, fry all the koftas and take them out. This will make your koftas and then gravy will be made.
3. After making koftas, prepare to make gravy. – To make gravy, take tomato paste, onion and ginger paste and fry it. – After this add cashew paste. Meanwhile, add two spoons of hot milk in it. – Now add dry spices and Kasuri methi to the gravy. Fry until the gravy starts leaving oil. – After this add half cup of water in the gravy. When it starts thickening a little, add cream and one spoon sugar to it.
4. After this, keep the gravy once again on low flame and leave it to cook. – After some time, when the gravy is cooked well, add the already fried koftas to it and mix well. Now you can sprinkle coriander over it and serve it with hot roti or rice.
