Egg Methi Bhurji Recipe

First of all, clean and wash fenugreek leaves and cut them. Then heat oil and ghee in a pan. When the ghee becomes hot, fry chopped green chillies, garlic in it till it turns light brown. When fried, add onion and fry till it turns golden. After frying onion, add turmeric, red chili powder and salt. Then add tomato and cook until it becomes soft. Now add chopped fenugreek leaves and cook while stirring for 2-3 minutes. Crack the eggs directly into the pan and cook on low flame while mixing. Keep stirring continuously, so that the egg gets cooked properly. Then add garam masala on top and mix well. After mixing, garnish with coriander leaves and serve it with roti.

Egg Fenugreek Bhurji

Material
Eggs- 4
Fresh fenugreek leaves – half cup
finely chopped
Onion- 1 medium
finely chopped
Garlic-3 cloves
Turmeric powder- half teaspoon
Red chilli powder – half teaspoon
Tomato- 1
finely chopped
Green chilli- 2
Garam masala- half teaspoon
Salt- as per taste
Oil or Ghee – 2 tbsp
Coriander leaves – for garnish

Method
Step 1 :
First of all, clean and wash fenugreek leaves and cut them. Then heat oil and ghee in a pan.

Step 2 :
When the ghee becomes hot, add chopped green chillies, garlic and fry till it becomes light brown.

Step 3 :
When fried, add onion and fry until golden.

Step 4 :
After frying onion, add turmeric, red chili powder and salt. Then add tomato and cook until it becomes soft.

Step 5 :
Crack the eggs directly into the pan and cook on low flame while mixing.

Step 6 :
Then add garam masala on top and mix well.

Step 7 :
After mixing, garnish with coriander leaves and serve it with roti.
