The name of one such recipe is Pahari Rajma. Let us tell you, Pahari Rajma is one of the famous recipes of Uttarakhand. Which is slightly larger in size and thicker than normal kidney beans. Many types of nutrients are present in this kidney bean. Which gives many benefits to health. If we talk about its taste, its taste is very good. You can eat this recipe with both rice and roti. But this recipe tastes more delicious with rice.
Ingredients to make Pahari Rajma
-2 cups kidney beans soaked in water overnight
-4 tbsp oil
-1/2 cup onion ginger garlic paste
-2 chopped tomatoes
-2 chopped green chillies
-1 teaspoon cumin
-5 cloves
-1 bay leaf
-1 piece of cinnamon
-1 teaspoon sugar
-Salt as per taste
-2 teaspoons Kasoori Methi
-1 teaspoon red chili powder
-1 teaspoon coriander powder
-1/2 teaspoon cumin powder
-1/2 teaspoon turmeric powder
– 1 tsp garam masala
How to make Pahari Rajma
To make Pahari Rajma, first of all wash the Pahari Rajma thoroughly after soaking it in water overnight, add 3-4 cups of water, salt, bay leaves, cloves, cinnamon in a pressure cooker and cook till 4-5 whistles. Now heat oil in a pan, add cumin seeds and let it crackle. After this, add finely chopped onion to the pan and fry until it turns golden. When the onion becomes golden, add chopped ginger, garlic and green chillies in the pan and fry. After this, add chopped tomatoes to it and cook it well and let the tomatoes become soft. Now add turmeric powder, coriander powder, red chilli powder and salt to the pan and mix everything well and fry the spices until the spices start leaving oil. After this, add boiled kidney beans to the spices and fry it along with the spices. Mix well. Now add water to Rajma as per requirement and let the spices and Rajma cook well for 10-15 minutes on low flame. Finally, add garam masala to the rajma, cover it and let it cook for some more time. Your tasty Pahari Rajma is ready. To garnish it, add chopped coriander on top. You can serve Pahari Rajma hot with roti and rice.
