If you are thinking of eating something different today then you can make Afghani Parda Pulao. It is a bit difficult to make but still you can make it at home and feed it to your family members. These pulao are loaded with spices, ghee and of course juicy mutton pieces and that's what makes them so delicious. Let us know the method of making Afghani Parda Pulao.
- 500 grams mutton pieces
- 1 or 1/2 basmati rice (soaked)
- 2 spoons ghee
- 1 tablespoon almond paste
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tbsp ginger garlic paste
- 1 medium onion, chopped
- 2 green cardamoms
- 4-5 cloves
- 10 black peppers
- 1 tsp cumin
- 1 inch cinnamon
- 2 bay leaves
- 2-3 green chillies
- 1 tsp fennel
- 1 tsp lemon juice
- water as required
- dough to cover
- 2 tsp sugar
- 2 cups flour
- salt to taste
- Onion (fried)
- 1/4 tsp black sesame seeds
- milk 1/2 cup
- hot water
How to Make Afghani Parda Pulao
- First of all, take a vessel, add ghee in it and wait for it to melt properly.
- Now add whole spices like cardamom, black pepper, cumin, cinnamon, green cardamom and black cardamom.
- Let them splutter. After this add onion and fry till it turns golden.
- Now add mutton mix botti and mix well until the color changes.
- Add ginger-garlic paste, green chilli, fennel powder, coriander powder, salt and mix everything.
- Now add water, mix well and boil. After this, cover and cook on low flame for 1 hour or till the meat becomes soft.
- Once done, take out the cooked meat in a bowl and keep it aside.
- Now for rice, put rice and water in a vessel, mix well and cook till the water reduces. Cover and cook on low flame till 3/4th cooked and keep aside.
- Now put ghee in a pan and let it melt. Add onion and fry until golden brown. Add green chillies, curd and mix well.
- After this, add cashew paste, almond paste and mix well.
- Now add garam masala powder, salt, lemon juice, mix well and cook for 2-3 minutes. After this add cooked meat and mix well.
- Now add water, mix well and cook on low flame till oil separates and keep aside.
- To knead the dough: 1. Add instant yeast, sugar and lukewarm water in a bowl, mix well and keep it aside for 10 minutes.
- Add flour and salt, mix well and knead until dough forms.
- Now grease the dough with oil and keep it covered for 50 minutes.
- After this, add cooking oil to it and knead the dough again.
- Now sprinkle flour and with the help of rolling pin roll out (18×18 inches) (in circular motion) and fold.
- Now spread the kneaded dough well in a bowl. After this add cooked rice, cooked meat, roasted onion, cooked rice and spread it evenly.
- Now add the fried onion and close the edges by folding them and grease them with oil and then turn it on a baking tray (10×10 inches).
- Now apply milk on the flour with the help of a brush and sprinkle black sesame seeds. Finally bake in a preheated oven at 180 degrees Celsius for 10-15 minutes.
