To make Potato Kachori, first of all add 1 cup flour, 2 tablespoons semolina, salt and 2 teaspoons ghee in a large vessel. Mix all these things well and knead the dough by adding water little by little. Take special care that the dough should neither be too hard nor too soft. After kneading the dough, cover it with a wet cloth and keep it to rest for 15 minutes. Now mash the boiled potatoes well and keep aside. After this, heat oil in a pan, add chopped green chillies and ginger and fry a little. After this, add coriander powder, cumin powder, turmeric powder, garam masala, dry mango powder and salt and mix well. Now add mashed potatoes to it and mix it well with the spices. After this, add chopped green coriander to the mixture, mix everything well and keep the mixture to cool for some time. Now prepare small balls from the kneaded dough. Press the dough with your palm and fill the boiled potato mixture in the middle and close it. Now roll this ball and give it the shape of a small kachori. Heat oil in a pan and slowly drop the kachoris into it. Fry the kachoris on medium flame so that they get cooked well from inside and become crispy. Your tasty Aloo Kachori is ready. Serve it hot with green chutney, sauce or potato curry.
