Ingredients required to make Palak Kofta
While making Palak Kofta, first of all kofta balls are prepared. The ingredients you will need to make these are- Oil (3 tbsp), Onion (2 tbsp, chopped onion), Garlic (3 cloves), Ginger (about 1 inch piece), Green chilli, Spinach ( About 250 grams, finely chopped) Paneer (1 cup grated), Potatoes (½ cup boiled and mashed), Gram flour (¼ cup roasted), Cashew nuts (5 pieces, chopped), 1/4 teaspoon hot spices, salt, corn Flour (¼ cup for rolling) and oil for frying.
Now comes the turn of making kofta gravy. The things you will need for this are – oil (3 tablespoons), cumin (1 teaspoon), one bay leaf, Kasuri fenugreek (two teaspoons), fennel (half teaspoon), one onion (finely chopped), Ginger garlic paste (1 tsp), turmeric (½ tsp), Kashmiri red chilli powder (1 tsp), coriander powder (1 tsp), coriander (2 tbsp finely chopped), tomato puree (2 cups ), cashew paste (¼ cup), salt (1 tsp), water (1 cup), garam masala (¼ tsp) and one teaspoon kasoori methi.
Palak Kofta Recipe
To make Palak Kofta, first prepare the kofta balls. For this, first of all keep the oil in the pan for heating. Now add onion, garlic, ginger and green chilli and fry well. Now add spinach to it and cook until it changes color slightly. Then turn off the gas flame and leave it to cool. When it cools down, blend it well in the mixer to prepare a smooth paste. Now take out this paste in a big bowl. Now add grated cheese, mashed potatoes, gram flour, cashew nuts, salt, garam masala to this paste and knead it like dough. Now prepare small balls from it. Then wrap them in corn flour and fry them until they turn light brown. In this way crunchy kofta balls will be ready. In the next step, prepare the curry for the kofta.
To make Palak Kofta Curry, first heat the oil in the pan. Add bay leaves, Kasuri fenugreek, fennel and cumin seeds and temper it. Now add onion to it and fry it until it turns golden. Then add ginger garlic paste to it and fry it well. Now add turmeric, garam masala, chilli powder and coriander powder. Fry the spices well on low flame. Add tomato puree to it and fry the spices until oil starts coming out from them. Now add cashew paste and salt and cook well. When the masala is cooked well, add water to it and cover it. After about 5 minutes, add kofta balls and let the gravy get absorbed. Garnish by adding green coriander and Kasuri methi on top. In this way tasty Palak Kofta will be ready. Serve it hot with roti or rice.
