Cabbage Manchurian
Ingredients: • Cabbage: 2 cups • Oil: for frying; For the sauce: • Oil: 1 teaspoon • Finely chopped onion: 1 • Finely chopped garlic: 5 cloves • Lengthwise chopped chillies: 3 • Tomato ketchup: 1 teaspoon • Chilli sauce: 2 teaspoons • Soy sauce: 3 teaspoons • Vinegar: 2 spoons • Water: 5 spoons • Cornflour: 2 spoons • Chopped green onion: 2 cups For the batter: • Flour: 4 spoons • Cornflour: 3 spoons • Salt: 1/4 teaspoon • Water: 1/4 cup

Method: To make the sauce, heat oil in a nonstick pan and add onion, green chilli and garlic. Fry the onion until golden. Now add tomato ketchup and chili sauce in the pan. When oil starts separating from the mixture, add soy sauce and vinegar to the pan and mix. Make cornflour solution in a small bowl and pour it into the pan. When the sauce starts thickening, turn off the gas. Mix all the ingredients for making the batter in a bowl. Heat oil in a pan. First dip the cauliflower florets in this solution and then put them in hot oil. Fry on medium flame until golden. After frying all the cauliflower florets, add them to the prepared sauce and mix well. If necessary, heat it for some time. Add chopped green onions, mix once more and serve immediately.

Cabbage Korma
Ingredients: • Cabbage: 1 • Finely chopped onion: 1 • Ginger paste: 1 teaspoon • Coriander powder: 1/2 teaspoon • Red chili powder: 1/2 teaspoon • Garam masala: 1/2 teaspoon • Turmeric powder: 1/2 spoon • Raisins: 1 spoon • Cashew paste: 2 spoons • Coconut milk: 1/2 cup • Salt: as per taste • Sugar: a pinch • Oil: 2 spoons • Ghee: 1 spoon

Method: Wash and cut the cabbage. Heat oil in a pan. Apply turmeric well to the cabbage and fry it. Now add onion, ginger paste, chilli and coriander powder in the pan and cook on medium flame. When oil starts separating from the spices, add cashew paste, raisins, salt and sugar in the pan. Fry for some time. Add coconut milk and a little water. Cook on medium flame. When the cabbage becomes soft, add garam masala and ghee in the pan. Mix well and serve.
