Bafla Bati is a very popular and delicious dish in the traditional kitchen of Rajasthan. This is especially considered to be a richer and softer version of dal-baati, which is served dipped in ghee. If prepared properly, it can taste like any confectionery.
Material
- wheat flour
- Semolina (a little)
- Curd
- Ghee
- Celery
- Salt
- baking soda (or a little baking powder)
- Water (as required)
Method of preparation
First of all, mix wheat flour, semolina, salt and celery in a big vessel. Now add some ghee and curd to it and mix it well. After this, add water little by little and knead a hard but soft dough. Cover the dough and keep it aside for about 20–30 minutes.
Now make small balls of dough and prepare round batis. Keep in mind that the bati should be a little thick so that it can cook properly from inside.
Now it can be boiled in the traditional way or baked in the oven. In the old method, the batis are first boiled in light water and then cooked in tandoor or pot fire, which enhances their taste even more.
When the batis become golden and crisp, take them out and cool them slightly. After this, break them and pour plenty of ghee on top.

Hot Bafla Baati is served with dal and churma. Its taste is so wonderful that it easily becomes the attraction of any special occasion.
