Marmalade making process
- To make marmalade, select apples which are very clean and unblemished. First wash the apples thoroughly and then peel them finely.
- Apples contain iron, which can change their color after peeling. Therefore, immediately after peeling the apples, dip them in 0.5% potassium metabisulfite solution.
- After this, take out the apples from the solution, wash them in clean water and then soak them overnight in a mixture of 1.50% calcium chloride and 0.2% potassium metabisulfite. Next day, take out the apples and wash them in good water.
- Boil water in a vessel. When the water starts boiling, remove the pot from the heat and drop the apples in for about 7 to 10 minutes.
- Take out the apples and put them in cold water. After some time, take it out of the water and mash it with the help of a fork. Now mix sugar and water to make syrup, keep it on flame and add citric acid in it. When the syrup is ready, filter it with a cloth and put the apples in it and keep it on flame again.
- Let the syrup cook on low flame. When the syrup becomes thick, remove it from the flame and let it cool down and leave it overnight. Reheat again the next day and keep it overnight.
