Coconut and Cashew Sukkah Recipe

4 tbsp refined coconut oil
1 tomato
1 tsp garlic paste
1 tsp chilli powder
2 tbsp tomato ketchup
30 soaked cashews
3 cups green onions
1 tsp ginger paste
1/2 tsp ground turmeric
1 tbsp garam masala powder
salt as required
Step 1
To make this main dish, cut the coconut pulp into two-inch pieces and keep them aside. Now, chop spring onions and tomatoes on a chopping board. Next, heat oil in a pan on medium heat and fry the chopped green onions until they become soft and change color. When it is cooked, add chopped tomatoes and cook until soft. Add coconut pieces and soaked cashews to this pan. Fry for two minutes.

Next, add ginger paste, garlic paste, turmeric powder, chilli powder and garam masala powder with a cup of water and mix well. Cook the dish until the water evaporates. Now, add salt and tomato ketchup to it. Keep stirring it and cook until it thickens. Make sure that the coconut pieces are well coated with the sauce. When it is cooked, take out the dish in a serving plate and garnish with coriander leaves. Serve it hot and enjoy!
