Creamy Vegetarian Mushroom Quesadillas Recipe

600 grams portabello mushrooms
8 tortillas
2 teaspoon cumin
170 grams cream cheese
2 tbsp vegetable oil
1 cup cheddar cheese
2 large onions
Step 1
Take a chopping board and chop the onions and mushrooms. Finely grate cheddar cheese in a bowl.
Step 2
Place a large frying pan on medium flame and heat oil in it. Add chopped onions and fry for 5 minutes. Add mushrooms and cumin seeds to the pan and stir.

Place a lid on the pan and let it cook for 6-8 minutes, until you see the mushrooms drying out and releasing their juice.

Now open the pan and cook for 4-6 minutes so that the juice released by the mushrooms dries up.
Step 5
Switch off the flame and remove the pan. Add grated cheddar cheese and cream cheese.

Take a spoon and spread half a cup of mushroom mixture on half of each tortilla leaving a half inch border around the edges.
Step 7
Now fold the tortilla with the other half in such a way that it surrounds the filling and forms a half circular shape.
Step 8
Spray a frying pan with cooking spray and place the pan over medium heat.
Step 9
Cook the quesadilla for 3-4 minutes until golden brown on both sides and the filling seems melted. Serve fresh and hot.
