Materials:
- 4 boiled eggs
- 3 medium sized boiled potatoes
- 1 finely chopped onion
- 1–2 green chillies (finely chopped)
- 1 tsp ginger-garlic paste
- 1/2 tsp garam masala
- 1/2 tsp red chillies
- 1/4 tsp turmeric
- Salt to taste
- 2 tablespoons of flour
- Breadcrumbs as needed
- Coriander (finely chopped)
- Oil for frying

Action:
- First peel the boiled potatoes and mash them well in a bowl. Add onion, green chillies, ginger-garlic paste, turmeric, red chillies, garam masala, salt and coriander and mix well until all the ingredients are combined.
- Peel the boiled eggs. You can keep the eggs whole or divide them into two portions as desired. Sprinkle lightly with salt and chilly and set aside.
- Scoop a portion of the potato mixture onto your hands. Place the egg in the middle and cover the egg completely with the potato mixture on all sides. Give it an oval or round shape.
- Make a thin batter by adding flour and little water. Dip the prepared chop first in the flour mixture and then thoroughly in the breadcrumbs, so that all sides are evenly coated.
- Heat oil in a pan. When the oil comes to medium temperature, gently drop the prepared chops into the oil. Fry on medium flame until golden and crispy on all sides.
- Drain the fried egg chop on a tissue paper and drain the excess oil. Serve the egg chop hot with green chutney or tomato sauce.
