Due to extreme heat and humidity, ginger either dries up very quickly and becomes hard like wood, or it gets fungus and starts rotting. Old and surefire recipe of wet soil or sand: This is the oldest and traditional method of storing ginger, which is still used extensively in villages and towns. For this you will have to take some clean soil or sand in a small pot or pan. How to store: Make the soil moist by sprinkling it with water. Now keep the ginger pieces pressed inside this wet soil. Benefit: Ginger keeps getting the necessary moisture inside the soil, due to which it neither dries up nor spoils for months. Remove ginger from the soil, wash and use it whenever needed. 2. Use of airtight container and ziplock bag: If you live in a flat and do not have soil, then ginger can be kept fresh by using the refrigerator. But instead of keeping it directly in the fridge, adopt a smarter method. How to store: First of all, wash the ginger thoroughly and clean all the dust from it. After this, dry it completely by blowing it with a fan or by wiping it with a cotton cloth (take care that not even a single drop of water remains on the ginger). Now wrap it in a tissue paper, seal it in an airtight container or ziplock bag and keep it in the vegetable box of the refrigerator. Advantage: Tissue paper absorbs excess moisture, which prevents rotting of ginger and it remains juicy for a long time. 3. Make ginger paste and store it in the freezer. This method proves to be the best and time-saving for working women and men. This also eliminates the hassle of peeling and crushing ginger every day. How to store: Peel the ginger and cut it into small pieces. Now prepare a smooth paste in the mixer without adding water (or with very little water). Add half teaspoon salt and one teaspoon mustard oil to this paste. Now put it in an ice tray and freeze it into cubes or directly fill it in an airtight jar and keep it in the freezer. Benefit: Salt and oil act as natural preservatives. Due to keeping it in the freezer, this paste does not spoil at all for 3 to 4 months and its taste also remains fresh. 4. Trick of paper towel and glass jar: Ginger first starts spoiling due to lack of proper balance of moisture and air. Glass jar is the best solution to this problem. How to store: Break unwashed dry ginger into small pieces. Spread a tissue paper or paper towel at the bottom of a clean glass jar, then place the ginger and cover it with a tissue paper on top and close the lid of the jar tightly. Keep it in the refrigerator at normal temperature. Advantage: Glass jar is not affected by outside air and the tissue paper present inside controls the moisture, due to which the ginger remains fresh.
