News India Live, Digital Desk: During Navratri and festival season, we often get tired of eating the same Sabudana Khichdi or Vada. If you are looking for some crispy and long lasting snack, then Sabudana Mathri Is a great option. As crunchy as it is to eat, it is equally nutritious. The best part is that you can make it once and store it for the entire 9 days of fasting.

Ingredients required to make Sabudana Mathri:

Main Ingredients: 1 cup sago, 2 boiled potatoes (for binding).

Flour: ½ cup water chestnut or buckwheat flour.

Spices: Finely chopped green chillies, grated ginger, green coriander, black pepper powder and rock salt as per taste.

Other: Half cup peanuts (roasted and coarsely ground) and ghee or peanut oil for frying.

Recipe: Step-by-Step Guide

Prepare Sabudana: Clean the sago, fry it lightly and then grind it in a mixer to make a fine powder. Filter it so that coarse grains are removed.

Prepare the mixture: In a large bowl, mix sago powder, buckwheat/water chestnut flour and boiled mashed potatoes. Add coarsely ground peanuts, green chillies, ginger, coriander and spices to it.

Knead the Dough: Knead a stiff dough without adding water or using very little water. The moisture from the potatoes will help bind the dough. Let it set for 10 minutes.

Give shape: Apply some ghee on your hands and take small balls and give them a flat shape of Mathri. With the help of a fork, make holes in the mathris so that they do not swell while frying and become crispy.

Fry: Heat ghee in a pan. Fry the mathris on medium flame until they become golden and crisp on both sides.

Pro Tip: Always fry the Mathris on medium-low flame. By frying on high flame, they will turn red from outside but may remain raw from inside. After they cool completely, store them in an airtight container.
