Ghee – 1 tbsp for frying
Khoya/Mawa – 50 grams
Pistachios – 1/4 cup chopped
Almonds – 1/4 cup chopped
Raisins – 3 tbsp
Green cardamom powder – 1 tsp for aroma
Optional: Sugar – If you want more sweetness then 2-3 tablespoons, but condensed milk adds enough sweetness.
easy method to make
1. First of all, heat a wok or pan well. Add 1 tablespoon ghee in it and let it melt.
2. When the ghee is hot, add 2 cups of vermicelli in it. Now fry the vermicelli on low flame while stirring continuously. While frying, the vermicelli should turn light golden and a pleasant aroma will start emanating (takes about 4-5 minutes). Roasting too much can make it bitter, so be careful. After roasting, turn off the gas and take out the vermicelli in a separate plate.
3. Now put 1 cup milk in a separate pan or vessel and keep it to boil on medium flame. When the milk boils, add chopped almonds, pistachios and raisins into it. Let everything cook together for 2-3 minutes so that the dry fruits leave the flavor in the milk properly.
4. Now add sugar (if using) and stir until it dissolves well. Then add condensed milk and mix. Lower the flame and cook while stirring continuously until the mixture becomes slightly thick.
5. Mash the khoya well with your hands so that no lumps remain. Then add it to the milk mixture and mix. After adding khoya, the mixture will become more creamy and thick. Cook it for 4-5 more minutes on low flame.
6. When the mixture thickens well and starts giving out aroma, add roasted vermicelli in it. Mix everything well and cook on low flame for 3-4 minutes so that the vermicelli absorbs the milk and becomes soft. Keep in mind, vermicelli can melt if cooked too much, so do not allow too much time.
7. Finally add ground green cardamom powder and mix well. This will give a wonderful aroma to the vermicelli.
8. Switch off the gas. Take out the prepared sweet vermicelli in a beautiful serving bowl. Garnish it with some more chopped pistachios, almonds and raisins. Can be served hot or cold.
