French onion soup: A timeless recipe for comfort and flavour

French Onion Soup Recipe

Here is a simple recipe to make this classic and comforting soup at home:

Ingredients:

  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 6 cups vegetable broth
  • 2 bay leaves
  • 4–5 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 baguette, sliced into rounds
  • 1 1/2 cups grated Gruyere cheese (or any melting cheese like Swiss or mozzarella)

Instructions:

  1. Caramelise the onions: In a large pot, heat the butter and olive oil over medium heat. Add the onions and cook, stirring often, for 25–30 minutes until they are caramelised. Sprinkle sugar midway through the process to enhance the caramelisation.
  2. Add garlic and wine: Stir in the minced garlic and cook for one minute. To deglaze the pan, add the white wine and use a spatula to scrape the bottom. Boil until the wine reduces to half its original quantity.
  3. Boil the soup: Add the vegetable broth, bay leaves, and thyme. Let it boil for 20–25 minutes. Season with salt and pepper to taste. Remove the bay leaves and thyme sprigs before serving.
  4. Prepare the bread: Preheat the broiler of the oven. Place the baguette slices on a baking sheet and toast them until they turn golden on both sides. Sprinkle grated cheese on top of each slice and broil until the cheese melts.
  5. Assemble and serve: Serve the soup in oven-safe bowls. Place the cheesy bread slices on top of the soup and broil until the cheese turns golden and slightly crispy.
