From Nimona Kebab to Coconut Pudding, guests at the AI Summit, make it at home!
At the invitation of Prime Minister Narendra Modi, the world’s leading personalities came to New Delhi. On the occasion, ‘India AI Impact Summit 2026’ was organized for the first time in the country. A special lunch was organized for the guests present on Wednesday (February 18). Rather than extravagant arrangements, the focus is on the perfectly crafted menu, each dish of which has a touch of Indian heritage.
The ‘all allergen-free’ vegetarian menu excludes milk, wheat and nuts. The starters consisted of nimona kabab (bean kebab), kham khatai (mugdal patties with sweet mango pulp) and kashmiri nadru kurkuri (lotus stem chips).
The main course consisted of saffron green polao, tandoori salad, and thepla. Finally Rose and Coconut Pudding and Ramdana Anjeer Laddu. When you hear the name of healthy food, you want to know the recipe! Today there are two such recipes.
Nimona Kebab
Beans are grown in large quantities in Bihar and Uttar Pradesh every winter. The innovation of this Nimona Kebab is keeping the popular dish ‘Motar Ka Nimona’ in front of it. To make kebabs you will need-
- One and a half cups of beans
- A boiled potato
- A tablespoon of cumin
- A teaspoon of asafoetida
- Two green chillies
- A teaspoon of ginger
- Two tablespoons of breadcrumbs or gram flour
- Half teaspoon garam masala
- Fresh coriander leaves
Blend the beans in a mixer. It’s better if there is a slight graininess, not quite smooth! Heat oil in a frying pan, add cumin seeds and hing. Pour in the bean batter. Keep moving the spatula quickly.
Drain, cool slightly, mix boiled potatoes, ginger, green chillies, coriander leaves, salt, breadcrumbs/ gram flour, garam masala. Shape the cover with hand pressure. Increase the amount of breadcrumbs if runny.
Heat oil and fry the kebabs on medium heat. Take down the Kheiri Sang on both sides. Serve with mint or tamarind chutney.

Rose and Coconut Pudding
Light pink in color, this milk-like dessert tastes and smells amazing. To make the pudding you will need-
- Two cups of coconut milk
- A cup of cow’s milk
- Three tablespoons of rice
- Three and a half tablespoons of sugar
- A tablespoon of rose syrup
- Half a teaspoon of rose water
- Four cardamoms
- A tablespoon of crushed pistachios
Boil the coconut milk on low heat. You can add cow’s milk to increase the density. Mix the rice powder and keep stirring quickly, taking care that the rice powder does not turn into lumps. Mix sugar, cardamom, rose syrup and few drops of rose water one by one. When it turns slightly pink, take it down. When it is cold, it becomes mushy, and the taste is bland. While serving, sprinkle rose petals and pistachio nuts on top.
Follow this recipe only if you are not allergic to milk and nuts. Or, you can make a pudding in the style of AI Summit lunch without these two.
