Gajar Ki Babri: It is really a pleasure to enjoy the freshness and sweetness of carrots in winters, and Carrot Rabdi is a great example of this. Everyone likes carrot halwa, but the creamy and rich texture of rabri takes it to a different level. When dry fruits like almonds, cashews and pistachios are added to it, its taste increases further and it is also beneficial for health.

Material
- Carrots-3 to 4
- Ghee-2 tbsp
- Almonds Pistachios and Cashews – 1/2 cup
- Full cream milk-1.5 liter
- Rice-1/2 cup
- Cardamom powder-1/2 tsp
- Sugar-1/2 cup
- Saffron threads soaked in milk – 5 to 6
- Mawa-1/4 cup
Method (Carrot rabbit)
1- First of all, wash the carrots thoroughly, peel them and grate them. Soak the rice on one side for 2 hours.
2- Heat a deep bottomed pan and add one spoon of ghee in it. Add dry fruits to it and fry them. Take out the dry fruits in a plate.
3- Add ghee again in the same pan. Add grated carrots to it. Fry the carrots on medium flame for 5-7 minutes so that the smell of rawness goes away.
4- Pour milk in another big pan and boil it. While boiling milk, take care that it does not stick to the sides of the pan.
5- When the milk boils, reduce the flame and let it cook until it thickens. On the other hand, put the soaked rice in a blender and grind it.
6- After this, add roasted carrots to condensed milk and mix well. Let it cook on low flame for 15-20 minutes.
7- Keep stirring with a spoon in between so that the mixture does not stick to the bottom. Now add ground rice to it and cook well.
8- Add cardamom powder, sugar and saffron and mix. If you want more creamy texture, add mawa to it and mix well.
9- Cook it for 5-7 more minutes. Add roasted dry fruits on top and let the carrots and milk thicken. Let the carrot rabri cool at room temperature and then refrigerate in the refrigerator.
10- The almonds, cashews and pistachios used in it not only enhance the taste but also make it healthy. If you want, you can increase the quantity of dry fruits.
