Material
- Wheat flour – 2 cups
- Salt – as per taste
- Grated cabbage – 1 cup
- Grated carrots – 1/2 cup
- Green chilli – 1 (finely chopped)
- Ginger – 1 tsp (grated)
- Celery – 1/2 tsp
- Cumin – 1/2 tsp
- Coriander powder – 1 tsp
- Red chilli powder – as per taste
- Garam masala – 1/2 tsp
- Salt – as per taste
- Green Coriander – 2 tbsp (finely chopped)
- Ghee or oil – as required

Method
1. First of all, mix wheat flour and salt in a vessel. Add water and knead a soft dough, cover and keep aside for 10-15 minutes.
2. Lightly squeeze the grated cabbage and carrots to remove excess water. Now add green chilli, ginger, celery, cumin, all the spices, salt and green coriander and mix well.
3. Take a ball of dough, roll it a little. Place 2–3 spoons of stuffing in the middle, close the edges and gently roll the round paratha.
4. Heat the pan. Add the paratha and apply ghee or oil on both sides and fry until golden and crisp. Serve hot cauliflower-carrot paratha with curd, butter, pickle or green chutney.
