Gram Flour Milk Cake Recipe

1 cup gram flour

1/2 cup milk powder

1/2 cup sugar

1/2 cup ghee

1/4 teaspoon ground green cardamom

Step 1 Roast the gram flour

Heat ghee in a pan. Add gram flour to it and mix well. Mix and fry for 8-10 minutes, or until the mixture releases ghee from the sides. Cook completely on low flame and ensure that the mixture does not turn brown, it should be yellow-golden in colour.

Step 2 Add milk powder

Now add milk powder and cardamom powder to the mixture. Mix well until the ingredients are well combined. Adding milk powder to the mixture will make the mixture 'grainy'. Don't worry if the mixture forms lumps at this stage, as we need the lumps at this stage. Once mixed, take out the 'granular' mixture in a bowl. Let the mixture cool slightly.

Step 3 Make the Sugar Syrup

Add sugar and 1/2 cup water in a pan. Boil it. When the syrup becomes one string, add the prepared gram flour mixture into it. Mix well and break the lumps and mix well with the syrup. Cook for a few more minutes or until the mixture becomes smooth and separates from the pan.

Step 4 Let it freeze

Pour the mixture into a greased baking tray lined with parchment paper. Spread the mixture evenly with a thickness of 1/2 or 1 inch (as per your choice). Garnish with chopped nuts of your choice and let the mixture rest at room temperature for 30 minutes.

Step 5 Cut into pieces and serve

Once frozen, cut into pieces and serve.
