Grilled Eggplant Parmesan Recipe

1 teaspoon black pepper
2 large tomatoes
2 sprigs basil
salt as required
800 grams shredded mozzarella
1 cup grated Parmesan cheese
2 large brinjals/eggplant
2 tbsp virgin olive oil step 1
First, take the brinjal and wash it under running water. Then, remove the ends, cut it into round thick slices. Sprinkle salt as per your taste and keep aside.

Once dry, sprinkle some oil with black pepper on both sides. Next, place them on the grill over medium heat until they become soft on both sides. Remove from grill.

Once done, place a piece of grilled eggplant in a serving dish, then top with mozzarella cheese and then a round slice of tomato and cover it with grated Parmesan cheese.

Repeat the process twice more and garnish with fresh basil leaves. You can also make light gravy with it.
