Almost every child likes soup. You too must be making tomato, spinach and many other soups for children at home. But, you would hardly have made broccoli and almond soup. If you have not tried this recipe yet, then today let us tell you a very easy recipe to make this soup. There is no need of flour, cornflour, butter or anything else to make this. Know the recipe for making Broccoli Almond Soup-
Ingredients to make Broccoli Almond Soup
- Broccoli- 200 grams
- Almonds- 18-20
- Salt- as per taste
- Onion- 1
- Garlic- 5-6
- Oil- 1 tablespoon
- Black pepper – ½ tsp
- Fresh cream- 1 tsp
Method
- Heat some olive oil in a pan and fry onion, garlic, celery or coriander stalks lightly on high flame.
- Add about 1 liter water in it. Add a little salt and boil the water for two minutes. Add 18 to 20 almonds in this boiling water. Let the water boil for about 10 minutes.
- When water boils very fast, add broccoli into pieces.
- Let the broccoli cook thoroughly for at least 5 to 6 minutes.
- Turn off the gas and filter this mixture through a strainer. Do not throw away the stock. After it cools down a bit, grind it in a mixer.
- While grinding, add stock little by little. After grinding, filter it through a soup filter. Strain the entire soup by pressing it well with a spoon.
- Boil it some more. If the soup seems thick then you can add remaining stock in it.
- Now add salt and ground black pepper in it. Your broccoli almond soup is ready. Pour some cream over it and serve it hot to children.
