When hot mutton curry is served with fluffy puris or jeera rice, everyone is forced to lick their fingers.

Ingredients for Mutton Curry

  • 1 kg mutton (cut into medium pieces)
  • 3 large onions (finely chopped)
  • 2 tomatoes (crushed)
  • 2 tbsp ginger-garlic paste
  • 1 cup curd
  • 3-4 green chillies (sliced)
  • 2 bay leaves
  • 4-5 cloves
  • 2 cardamoms
  • 1 cinnamon stick
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • salt as per taste
  • 4-5 tbsp mustard oil or refined oil
  • Coriander for garnishing

How to marinate mutton?

  • Delicious mutton curry starts with good marination.
  • Wash the mutton thoroughly and strain it.
  • Mix curd, turmeric, salt and half ginger-garlic paste in it.
  • Keep it covered for at least 1-2 hours.
  • If you have time, marinate it in the refrigerator for 4-5 hours or overnight. This will make the mutton soft and juicy.

Mutton curry recipe

  • Heat oil in a pan or pressure cooker. Add bay leaves, cloves, cardamom and cinnamon and fry lightly. Now add chopped onions and fry until golden brown.
  • Add remaining ginger-garlic paste and cook until fragrant. Then add ground tomato and all the dry spices and fry the spices until the oil starts separating.
  • Now add marinated mutton to the spices and fry on high flame for 5-7 minutes while stirring well. With this the spices will get absorbed well into the mutton.
  • Add water as required. Close the lid of the cooker and let it cook for 4-5 whistles on medium flame. If you are making it in a pan then cover it on low flame and cook for 40-45 minutes, keep stirring in between.
  • When the mutton becomes soft and the gravy starts appearing thick, then add garam masala and green coriander on top and cook for 5 more minutes.

Special tips for perfect mutton curry

  • Always take mutton that is fresh and of good quality.
  • It is very important to fry the onion well, this determines the color and taste of the gravy.
  • Do not let the spices burn, otherwise the taste may become bitter.
  • If you want gravy more rich then you can add a teaspoon of desi ghee at the end.
