Material
Flour-2 cups
Semolina-½ cup
Desi Ghee -½ cup (for moyan)
Cardamom powder-½ tsp
Powdered sugar-2 tbsp
Salt-a pinch
Lukewarm milk or water as needed
Sugar-1 cup
Water-½ cup
Saffron threads – 8–10
Cardamom powder-½ tsp (for syrup)
Method
- Mix flour, semolina, salt and powdered sugar in a large vessel. Now add ghee to it and mix well until the mixture starts binding when pressed in the fist.
- Gradually add milk or water and knead a stiff dough. Cover and keep it for 15-20 minutes.
- Make a ball of dough and roll it to medium thickness. Make light holes with a fork so that it does not puff up while frying. Cut into small rounds or desired shapes.
- Heat ghee or oil in a pan on medium flame. Fry the mathri on low to medium flame until it becomes golden and crisp. Take out on tissue paper.
- Boil sugar and water in a pan. Prepare 1 string syrup. Now add saffron and cardamom to it. Add fried mathri in lukewarm syrup and coat well. Spread it on a mesh plate and let it dry.
Tips for perfect taste
- Keep the dough a little hard for more crispness.
- While frying, keep the flame low so that the mathri becomes crisp from inside.
- If you want, you can also add chopped pistachios or almonds on top.
