Holi special suji Gujiya recipe: Step-by-step guide for beginners

What is a Gujiya?

Gujiya is a deep-fried Indian pastry stuffed with sweetened khoya (mawa), dry fruits, desiccated coconut, cardamom, and sometimes semolina. Its half-moon shape and flaky texture make it a classic festive sweet cherished across India.

Gujiya recipe with Suji

For the Dough

  • 2 cups all-purpose flour (maida)
  • 4 tbsp ghee
  • A pinch of salt
  • Water (as needed)

For the Suji Stuffing

  • 1 cup semolina (suji/rava)
  • ½ cup desiccated coconut
  • ¾ cup powdered sugar
  • 3 tbsp ghee
  • 2 tbsp chopped almonds
  • 2 tbsp chopped cashews
  • 1 tbsp raisins
  • ½ tsp cardamom powder
  • Optional: 1 tbsp melon seeds or chopped pistachios

For Frying

  • Oil or ghee

How to make:

  1. In a wide bowl, add mixed flour, salt, and ghee. Rub together in ghee to make coarse dough.
  2. Add water gradually to form a neat dough.
  3. Cover with a cloth for 30 minutes.
  4. Heat a pan and add suji, roast on a medium flame and let it cool.
  5. Once cooled, add desiccated coconut, sugar, chopped nuts, raisins, and cardamom powder.
  6. Divide the dough into small balls, and roll them into a thin disc.
  7. Place 2 tsp of suji filling in the centre and fold into a half-moon by dampening the edges.
  8. Heat the ghee in a pan on medium heat.
  9. Fry gujiyas in batches until golden and crispy.
  10. If you want a sugary and glossy finish, dip a warm one-string sugar syrup.
  11. Sprinkle pistachios and enjoy.
