Bajra Laddu is a traditional Indian sweet, which is beneficial for health as well as delicious.   • Bajra flour – 2 cups
  • Jaggery (grated) – 1 cup
  • Ghee (pure desi ghee) – 1 cup
  • Dry coconut (grated) – 1/4 cup (optional)
  • Poppy seeds – 2 tbsp (for garnishing)
  • Dry fruits (almonds, cashews, raisins) – 1/2 cup (chopped)
  • Cardamom powder – 1 teaspoon
  • First, heat 1/2 cup ghee in a deep pan. Add millet flour to it and fry it on low flame while stirring continuously. When the flour starts smelling and its color turns light brown, then understand that the flour has been roasted. Take it out in a plate and let it cool.
  • After this, add 1-2 spoons of ghee in the same pan and lightly fry cashew nuts, almonds and raisins. Mix roasted dry fruits with millet flour.

Now to prepare the jaggery mixture, pour 1/2 cup water in the pan and add grated jaggery in it. Cook it on low flame, until the jaggery melts completely and becomes thick (1 string syrup). To check the consistency of jaggery syrup, add one drop to water. If it solidifies, the syrup is ready.

Slowly pour the melted jaggery syrup into the roasted millet flour. Add remaining ghee, grated coconut and cardamom powder to it and mix well. This mixture should be soft and able to be made into laddus while remaining slightly warm.

Let the mixture cool slightly so that you can handle it with your hands. Apply ghee on your hands and make round laddus from the mixture. Roll the prepared laddus in poppy seeds, so that it sticks to the laddus. Store these delicious and nutritious laddus in an airtight container. These remain fresh for 15-20 days.
